A coffee bean’s natural appearance dramatically differs from what you usually see in advertisements or if you buy your own coffee beans. However, there are different varieties of coffee and their coffee beans differ from one to another. Such differences are flavor, size disease resistance. Is a coffee bean truly a bean? Coffee beans are located inside different colors of coffee cherries and grow next to waxy leaves on the branch of the trees. The anatomy of the coffee cherry There different levels of anatomy when it comes to the coffee cherry: •Exocarp, the skin of the coffee cherry •Mesocarp, also known as the pulp •Mucilage, the inner layer of the mesocarp •A layer of pectin, underneath the mucilage All of the said layers contain sugar and are what makes the fermentation process so special. After all these layers we finally arrive at the coffee beans that we all know and love, located at the endosperm of the coffee cherry, which is after the other said layers. Looking at the endosperm more often than not, you can see two beans covered by the silverskin (a thin epidermis) and parchment (the endocarp) Those responsible for the production pick the coffee cherries at the right level of ripeness, to maximize the flavor of the coffee bean and to highlight its aroma. What makes the coffee bean so spectacular is also that it has a lifespan of 50 to 70 years and is the largest commodity after oil! The two most common coffee plants Those who are well acquainted with coffee and its many characteristics have probably seen at their local store different bags of coffee. Those who are most common among the coffee plants are Arabica and Robusta. •Arabica: The journey of the Arabica bean started in the forests of Ethiopia. Through time it managed to be loved by many, helping coffee lovers across the whole world power through their day with ease. There are different kinds of Arabica beans and specifically more than 20 varieties worldwide. When tasting coffee from Arabica beans you will be mesmerized for their slightly sweeter taste compared to other varieties and for common flavors of cherries, chocolate and hints of fruit. •Robusta: The Robusta beans mainly grow in the areas of Africa, Indonesia and what separates them from the Arabica beans is that they can be grown in lower altitudes. It has double the amount of caffeine compared to the Arabica bean and it has a stronger taste. You might wonder though why Robusta beans are cheaper than the Arabica beans? Robusta beans come from a plant called “Coffea canephora”. This plant yields more coffee cherries per tree than Arabica plants, making them easier to acquire and more commonly sold around the whole world.
